Banana Zucchini Bread

vegan, dairy free, egg free, zucchini banana bread

2 bananas

3/4 cup sugar

1/4 cup oil

1 tsp vanilla

1 small zucchini (1 cup)

1 1/2 cups flour

1/2 tsp salt

3/4 tsp baking soda

1 tsp cinnamon

1/4 tsp all spice

1/2 cup walnuts or pecans

Pre-heat oven to 350. Mash the bananas in a bowl. Stir in sugar, oil and vanilla. Grate zucchini and stir into banana mixture. Sift in flour, salt, baking soda cinnamon and all spice, stir to combine. Stir in chopped nuts. Pour into a loaf pan and bake for 55 minutes.
