Salad Wraps

Ingredients:

  • 2 tomatoes
  • 1/2  cucumber
  • 1 handful parsley
  • 2 sprigs mint
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • butter, leaf or romaine lettuce

Method:

Chop the tomatoes, cucumber, parsley and mint and toss with lemon and oil.  Spread a leaf of lettuce with hummus or another yummy spread such as walnut cheez or cashew cheez. Add the filling, fold and enjoy!
