This is a simple and tasty recipe that is easy to modify to your own liking.
2 cups flour (works well with whole wheat and unbleached)
1/4 cup sugar (or other sweetener of your choice)
1 1/4 tsp baking powered
1/2 cup (one stick) Earthbalance
1/2 cup currents or dried cranberries
2/3 cup milk (I use almond, but soy milk is probably fine too)
2 tbsp lemon juice
2 tsp lemon rind
Preheat oven to 200 degrees C (400 F). Mix the milk with the lemon juice and the rind and set aside. Put all the dry ingredients in bowl (except currents), add the Earthbalance and combine with a pastry blender. Stir in the currents and then the milk. Transfer to a lightly floured surface and knead a few times. Flatten into a circle about 2 cm thick and cut into 8 triangles. Bake for 18 minutes.
Optional icing:
Mix 1 cup of icing sugar with about a tbsp of lemon juice. Adjust to preferred consistency.
Variation:
1/2 cup of walnuts instead of currents
1/4 cup maple syrup instead of sugar
